Nduja
What? A spicy spreadable salami from Calabria in southern Italy. It’s cured in a casing like hard salami, but maintains its soft texture when stored at room temperature.
Where? Delis and gourmet food shops.
How?
Try it crumbled over pasta or pizza for a spicy kick, or just spread it on crusty grilled bread as part of an antipasti platter.

Nicoise olives
What? Grown on the French Riviera, these small, strong-tasting black olives are a key ingredient in Nicoise salad.
Where?
Delis and selected supermarkets.
How?
It’s an essential ingredient in Nicoise salad, of course, but it also works well in seafood-hero dishes such as tuna, salmon and calamari.

Nori sheets
What? Thin layers of seaweed used in Japanese cooking, most notably for wrapping sushi.
Where? Asian aisle of selected supermarkets and Asian food shops.
How?
Kids will love using nori sheets to make homemade sushi, but they can also be toasted and crumbled over steamed rice or your favourite Asian dish for a sweet ocean flavour.
