Unbleached flour
What? Unbleached flour doesn’t contain the chemicals used to extend the shelf-life and whiten wheat flour, but it can contain chemical dough improvers and maturing agents. Unbleached flour has a higher gluten content than bleached flour.
Where? Health food shops.
How? Due to its higher gluten content, unbleached flour is perfect for making doughs – think pasta, bread and pizza bases. It’s not, however, ideal for baked products that are lighter in texture, such as sponge cakes.
