Yeast
Yeast

From yabbies to yuzu juice.

Yabbies
What? A freshwater crustacean which lives in the waters of eastern Australia as well as South Australia. They have a mild, sweet flavour.
Where?
Yabbies are available from fishmongers, but you may need to order ahead.
How?
If using live yabbies, place them in the freezer for 30 minutes to put them to sleep and numb them. Plunge yabbies into a large pot of boiling water and cook for 8-10 minutes until the shells turn orange.

Yeast
What?
Yeast, available as fresh baker’s yeast, or dry active yeast, is a living micro-organism used as a leavening (raising) agent in breads and doughs. (Brewer’s yeast and nutritional yeast are also available, and can be used as nutritional supplements but not in baking.)
Where? Fresh yeast is from delis and health food shops, dry active yeast is available from supermarkets in sachets (usually 7g sachets).
How? Yeast needs food and warmth to become an active raising agent – before adding to a dough mixture, dissolve it in a little warm (not hot) water with a little sugar and stand for 5 minutes until bubbling.

Yellow rock sugar
What? A dark yellow-coloured sugar which is the crystallised form of a mixture of honey, refined and unrefined sugars. Sometimes called lump sugar or rock candy, it is sold in boxes.
Where?
Asian food shops.
How?
Yellow rock sugar can be used in stocks and sauces for Asian-style meat dishes.

Yuzu juice
What? The juice of a Japanese citrus fruit which looks like a small grapefruit.
Where?
Asian food shops.
How?
Add a citrusy element to dressings for raw fish with yuzu juice. Substitute lime juice.
