Sydney-based BRIX is on a mission to reinvent rum, and its latest drop is bound to cause a rum-ble. The premium small-batch craft rum distiller has teamed up with iconic Sydney institution Bourke Street Bakery to release the limited-edition Trail Mix w/ Bourke St Bakery – a rum infused with banana bread, almond croissants, figs, lemon peel and pear skins; all leftover byproducts from the Bourke Street Bakery kitchen. So it’s not just the perfect tipple to replenish you after a weekend hike; it’s also doing its bit to reduce food waste. If that’s not a good enough reason for a daiquiri we don’t know what is.
The sweet and buttery bakery additions are paired with a hint of allspice, peppermint gum and licorice, and the rum has been aged for three years in locally sourced American oak stout casks. The result is a unique spirit with delicate aromas of bright citrus which are then followed by a buttery palate of soft oak, vanilla and warm spices. It’s just what’s needed to warm the cockles of your heart as the Dark & Stormy autumn approaches.
