The Noma team has announced tonight it will open a new restaurant in Denmark in 2016, to be called 108.
The much revered and impossibly difficult to book a table within Noma, arguably the best restaurant in the world, has announced it will open a second restaurant in Copenhagen.
Rene Redzepi says the new 108 will be a partnership with local chef Kristian Bauman. The move comes 12 years after the opening of Noma in Copenhagen and it is understood Redzepi has been “looking for the right opportunity to expand the family”.
The restaurant name refers to the permanent address on Strandgade in Christianshavn, where the doors to 108 will open in Denmark’s spring, from April.
Until then, the 108 team will take up post in the current Noma restaurant in Copenhagen, while Redzepi and the Noma team are based in Australia. The Noma-based pop up will start on January 20th, lasting 13 weeks, and will include an a la carte menu.
Bauman himself says he has dreamt of opening a restaurant for many years. “We’ve spent the last six months preparing for this project: we’ve created dishes, started collaborations with various farmers, and salted, pickled, and preserved all the delicious berries, plants, and flowers that nature has to offer.”
The chef will find inspiration from his local Denmark and its restaurant scene. “I’m going to continue to build on these foundations through the ideas and influences I’ve gained from my upbringing, my career, and my travels. I want to keep exploring; creating the essence of an urban restaurant; one with a proximity to nature, to farms, and to the vibes of the city.”
