Here, the cultivation of wheat and the art of milling are raised up to a level of artisanal craftsmanship rarely witnessed in our modern age. The farm proudly embraces heirloom grains, preserving the legacy of ancient wheat varieties that have largely fallen out of favour in commercial, large-scale wheat production. 

“There’s an international movement whereby grain is being treated in much the same way as a single-origin coffee, or a wine,” he says. “As an expression of the place where it’s grown and the variety that’s being grown.” 

This movement is still in its infancy here in Australia, but Cotter is on a mission to change all that. With care and respect for tradition, each grain of wheat is cultivated with organic farming methods, ensuring a connection to the land and practices that give back to the soil.

It is for these reasons that Cotter and his team have taken out the top spot in the 2023 delicious. Harvey Norman Produce Awards From the Earth category.

Tuerong Farm’s flours include a wide range of heritage grains, such as 18th century Rouge de Bordeaux, Marquis 1904, Garland 1109 and spelt flour – all of which are praised for their qualities in crumb texture, gluten levels, digestibility and, most importantly, subtle nuances of flavour.
