Dinner’s done in a flash with this super-quick recipe from Matt Preston, featuring crispy salami in a vibrant tomato, capsicum and paprika sauce.
For fast pasta recipes like these, remember to undercook your pasta slightly (like two minutes less than the packet instructions), as you want it to suck up some of the pan juices when it gets tossed with the pasta sauce.
Ingredients (8)
- 500g penne (see recipe notes)
- 1 1/2 tbs extra virgin olive oil
- 200g salami, cut into 1cm chunks
- 250g cherry tomatoes, halved
- 1 red capsicum, cut into strips
- 6 garlic cloves, thinly sliced
- 2 tsp sweet paprika
- Chopped flat-leaf parsley and finely grated parmesan, to serve
Method

1.Bring a large saucepan of salted water to the boil. Add pasta and cook for 2 minutes less than packet instructions. Drain pasta, reserving some cooking water, and return pasta to pan.

2.Heat oil in a large frypan over medium-high heat. Cook salami, stirring occasionally, for 5 minutes, or until crispy at the edges. Add tomatoes, capsicum, garlic and paprika and cook, stirring occasionally, for 5 minutes, or until slightly softened.

3.Toss through drained pasta and season with freshly ground black pepper, adding a splash of reserved cooking water if pasta looks a bit dry.

4.Garnish with parsley and parmesan to serve.
Recipe Notes
Because of its shape and angled edges, penne is great for holding onto chunky sauces like this, but you could also use rigatoni or fusilli.
