Honey joy self-saucing pudding

The classic Aussie bake-sale treat gets saucy in this delicious dessert mash-up. An ooey-gooey self-saucing pudding comes topped with ‘honey joy’ corn flakes, with extra sweet and crispy joy on the side for an added sprinkle of nostalgia.
You’ll need a 20cm (base) x 25cm (top), 5.5cm-high 1.25L-capacity baking dish for this recipe.

- 60g salted butter, melted, plus extra, to grease
- 1 1/4 cups (185g) self-raising flour
- 1 large egg
- 1/2 cup (125ml) milk
- 2 tbs runny honey
- 1/2 cup (125g) firmly packed dark brown sugar
- 1 tsp cornflour
- 1 cup (250ml) boiling water
- Lime zest and shredded coconut, to sprinkle
- Vanilla ice cream, to serve
Honey joy topping
- 100g salted butter
- 1/3 cup (75g) caster sugar
- 1 1/2 tbs honey
- 4 cups (160g) corn flakes
Method

1.Preheat oven to 180°C/160°C fan-forced. Grease a 20cm (base) x 25cm (top), 5.5cm-high 1.25L-capacity baking dish with extra butter. Line a small baking tray with baking paper.

2.Place flour in a large bowl. Whisk eggs, milk and honey in a jug until smooth. Add to flour along with melted butter and stir until combined. Pour into prepared dish and level surface with a spatula.

3.Combine sugar and cornflour in a medium bowl. Sprinkle over the batter, then slowly pour over the boiling water. Bake for 15 minutes.

4.Meanwhile, make the honey joy topping. In a medium saucepan over medium heat, melt butter with sugar and honey until it starts to bubble and turn golden. Remove from the heat, then gently fold through the corn flakes, taking care not to break them.

5.Carefully remove baking dish from oven and quickly spoon a little corn flake mixture over the top. Arrange remaining corn flakes on the prepared tray. Return both to oven for a further 15 minutes, or until corn flakes are golden and pudding is set with a slight wobble.

6.Sprinkle pudding with lime zest and shredded coconut. Serve immediately with scoops of ice cream and extra honey joy topping on the side.
