Aussie vermouth highball cocktail
This tangy Aussie summer cocktail is the refresher your next party needs.

Ingredients (9)

  • Ice cubes, to serve
  • 50ml Regal Rogue Daring Dry Vermouth
  • 15ml lime juice
  • 100ml chilled sparkling water
  • Fresh herb sprig (we used mint and dill)
  • Lime wedge, to serve

Herb syrup

  • 250g white sugar
  • 10 each basil and mint leaves
  • Small dill sprig

Method

  • 1.
    For the syrup, place sugar and 1 cup (250ml) water in a small saucepan and bring to the boil over medium heat, stirring constantly, for 3-5 minutes to dissolve sugar. Add herbs, stir, then remove from heat. Set aside to cool, then strain.

    Fill a highball glass with ice cubes. Add vermouth, lime juice and 1 tbs herb syrup. Top up with chilled sparkling water. Garnish with sprigs of herbs and a lime wedge.

Recipe Notes

The herb syrup makes 1 1/2 cups (375ml), enough for 18 drinks. It will keep in a jar in the fridge for up to 2 weeks.
