Just when you thought an espresso martini couldn't possibly get any better, we've come up with this recipe using Lotus Biscoff biscuit spread.

Ingredients (6)

  • 2 tbs Lotus Biscoff Spread, plus 1 tsp for glass rim
  • 4 Lotus Biscoff biscuits, crushed, plus 1 uncrushed to serve
  • 45ml vodka
  • 30ml espresso coffee
  • 20ml coffee liqueur
  • Coffee beans, to serve

Method

  • 1.
    Rub the rim of a martini glass with 1 tsp of Biscoff spread until coated. Dip the coated rim of the glass into a shallow dish filled with crushed Biscoff biscuits until lightly coated. Fill martini glass with ice and chill in the freezer until ready to serve.
  • 2.
    Combine vodka, espresso coffee, coffee liqueur and Biscoff spread in a chilled cocktail shaker filled with ice, and shake vigorously.
  • 3.
    Strain the cocktail into the martini glass. Garnish with three coffee beans and a Biscoff biscuit to serve.
