The sweetness of figs offers a satisfying contrast to the bite of bitter leaves and the crunch of macadamias in this standout salad by Darren Roberston and Magdalena Roze.

Ingredients (8)

  • 1/2 lemon, halved, plus 1 extra, segmented
  • 1/3 cup (80ml) extra virgin olive oil
  • 2 heads radicchio, large leaves torn, inner leaves left whole
  • 6 black figs, quartered
  • 150g blue cheese, crumbled
  • 100g macadamias, toasted, roughly chopped
  • 1 cup fresh mixed herbs, torn (we used flat-leaf parsley, mint and basil)
  • Crusty bread, to serve

Method

  • 1.
    Juice half a lemon into a large serving bowl. Add oil and honey. Season to taste and whisk to combine.
  • 2.
    Add radicchio, figs, blue cheese, macadamias, herbs and lemon segments and gently toss to coat.
  • 3.
    Serve with crusty bread alongside.
