You’ll need a 2L-capacity baking dish and a kitchen blowtorch for this recipe.
A lemon delicious waits for no one – be sure to have everyone ready and waiting to receive their bowl when the pudding comes out of the oven.
Ingredients (8)
- 150g unsalted butter, melted, cooled
- 1 1/2 cups (330g) caster sugar, plus 1/4 cup (55g) extra
- 1 cup (250ml) milk
- 1/2 cup (125ml) limoncello (substitute lemon juice)
- 1/2 cup (125ml) lemon juice
- 3/4 cup (110g) Woolworths Essentials Self Raising Flour
- 4 eggs, at room temperature, separated
- Vanilla ice cream, to serve

1.Preheat oven to 180°C/160°C fan-forced. Grease base and side of a 2L-capacity baking dish. Place dish inside a deep roasting tray.

2.Place butter, sugar, milk, limoncello, juice, flour and egg yolks in a large bowl. Whisk until well combined and smooth.

3.Place egg whites in a separate large bowl and whisk until soft peaks form. Fold one-third of the egg whites into the limoncello mixture until very well combined, then gently fold in remainder until just combined. Pour into prepared dish, then carefully pour enough boiling water into the roasting tray to come halfway up the side of the baking dish.

4.Bake for 40-45 minutes, until just set and golden. Very carefully remove dish from roasting tray and immediately sprinkle top evenly with extra sugar. Use a kitchen blowtorch to melt and caramelise top to form a brulee crust.

5.Carefully bring pudding straight to the table, top with ice cream and serve with extra scoops alongside.
