Caramel fudge
Sweet and chewy, with a hint of salt for balance, our classic fudge recipe is also a cinch to prepare.

Ingredients (8)

  • 395g can sweetened condensed milk
  • 150g salted butter
  • 1 1/4 cups (310g) lightly packed brown sugar
  • 2 tsp vanilla extract
  • 2 tbs golden syrup
  • 2 tbs glucose syrup
  • 180g white chocolate, chopped
  • Salt flakes, to sprinkle

Method

  • 1.
    Grease a 19cm square cake pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
  • 2.
    Place condensed milk, butter, sugar, vanilla and syrups in a heavy-based medium saucepan over medium-low heat. Cook, stirring often, for 8-10 minutes until butter is melted.
  • 3.
    Increase heat to medium. Cook, stirring constantly, for 10 minutes or until mixture thickens and coats the back of a spoon. Remove from heat and add chocolate. Stir until melted and combined.
  • 4.
    Quickly pour mixture into prepared pan, spreading to level (fudge will start to set immediately). Sprinkle with salt flakes. Set aside for at least 3 hours or until firm. Serve cut into small squares.

Store fudge in an airtight container in the fridge or in a cool, dark place for up to 1 month.
