These are cheesy potatoes like you've never seen them before!

Ingredients (12)

  • 4 large baking potatoes, washed
  • 1 small Granny Smith apple, thinly sliced
  • 1 small radicchio, leaves torn
  • 100g rocket leaves, torn
  • 1 tbs extra virgin olive oil
  • Lemon wedges, to serve

Rarebit mix

  • 40g unsalted butter
  • 1 tbs plain flour
  • 1/2 cup (125ml) milk
  • 80g provolone cheese, grated, plus 30g extra
  • 1 tbs Worcestershire sauce
  • 1 tbs English mustard

Method

  • 1.
    Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Pierce each potato 2-3 times with a fork, place on prepared tray and season with salt flakes. Bake for 1 hour 30 minutes-1 hour 45 minutes until tender.

    Meanwhile, for the rarebit mix, melt butter in a medium saucepan over medium-high heat. Stir in flour. Mix until smooth and cook, stirring constantly, for 2 minutes or until flour has cooked out. Gradually whisk in milk and cook for 2 minutes. Remove from heat. Mix in cheese, Worcestershire sauce and mustard. Set aside to cool.

    Set potatoes aside to cool slightly. Increase oven to 220°C/200°C fan-forced. Cut tops off potatoes and scoop out filling, leaving a 0.5cm shell. Roughly mash potato flesh and add to rarebit mix. Season and stir to combine.
  • 4.
    Arrange potato shells cut-side up on tray. Spoon rarebit mix into shells. Season with freshly ground black pepper and sprinkle with extra cheese. Bake for 10-15 minutes until golden.
  • 5.
    Combine apple, radicchio, rocket and oil in a large bowl. Season. Toss to combine. Serve baked potatoes and salad with lemon wedges alongside.
