Ingredients (14)

  • 3 skinless chicken thigh fillets
  • 3 garlic cloves, crushed
  • Finely grated zest of 1 lemon
  • Juice of 1 lemon
  • ¼ cup (60ml) extra virgin olive oil
  • 2 tbs white wine
  • ¼ cup (35g) plain flour
  • 250ml crème fraîche
  • 1 cup (250ml) pure (thin) cream
  • 1 tbs Dijon mustard
  • 150g finely grated parmesan
  • 1 bunch chives, finely chopped, plus extra to serve
  • 300g casarecce or macaroni, cooked according to to packet instructions, drained, refreshed
  • 2 corn cobs, kernels sliced off

Method

  • 1.
    Preheat oven to 200°C. Place chicken on a baking tray lined with baking paper and rub with garlic, lemon zest and juice, 2 tbs oil and wine. Season. Bake for 20 minutes or until cooked through.

    Chop chicken and place cooking juices, flour, crème fraîche, cream, mustard, parmesan and chives in a bowl. Whisk to combine, then pour into a 1.5-litre baking dish and stir in chicken and pasta. In a bowl, toss corn kernels with remaining 1 tbs oil, then scatter over mac and cheese. Bake for 30 minutes or until golden and bubbling. Scatter with extra chives to serve.
