Heat yourself up from the inside with a kick of chilli that's laced with the richness ofchocolate.

Ingredients (15)

  • 20ml (1 tablespoon) olive oil
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 500g lean minced beef
  • 2 teaspoons chilli powder
  • Pinch cayenne pepper
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 410g can chopped tomatoes
  • 125ml (1/2 cup) beef stock
  • 50g dark chocolate
  • 1 tablespoon red wine vinegar
  • 1 teaspoon brown sugar
  • 425g red kidney beans rinsed, drained
  • Flour tortillas, to serve

Method

    Heat the oil in a large saucepan, add the onion and garlic and fry for 1-2 minutes or until onion is just softened. Add the beef, then increase heat to high and cook for 5 minutes, breaking up any lumps with a fork, until the meat is well browned. Stir in the chilli, cayenne and oregano, and cook for a further minute. Add the tomato paste, tomatoes and stock. Bring to the boil, then reduce heat to low and simmer for 20-25 minutes, stirring occasionally. Stir through the chocolate until melted, then blend in the vinegar, sugar and beans, and season with salt and pepper.

    Serve with flour tortillas. To complement the fieriness of the chilli, as well as the tomato flavour, I like to serve a salad of lettuce or English spinach with cucumber (peeled and seeded) and avocado.

    Dress the salad with olive oil and lemon juice mixed with a little Dijon mustard.
