Ingredients (6)

  • 180g unsalted peanuts, roasted and skinless, plus extra, to decorate
  • 1 cup (150g) plain flour, sifted
  • 70g icing sugar, sifted
  • 1/3 cup (80ml) peanut or canola oil
  • 1 egg yolk
  • 2 tsp cold water

Method

  • 1.
    Preheat oven to 200°C/180°C fan-forced. Grease a baking tray and line with baking paper.
  • 2.
    Whiz the peanuts in a food processor until a coarse paste. Alternatively, place peanuts in a zip-lock bag and seal, then bash bag with a rolling pin.
  • 3.
    Mix the flour, icing sugar and a large pinch of fine salt in a large bowl, then add the ground peanuts and whisk until combined. Add the oil and stir (or use your hands) until a dough is formed.
  • 4.
    Scoop about 1/2 tbs dough and roll into a ball. Place on prepared tray. Repeat until all cookie mix is rolled, spacing each ball slightly apart on tray. Lightly press a peanut into the centre of each cookie.
  • 5.
    Mix egg yolk and water in a small bowl. Brush each cookie with egg wash, then bake for 15-18 minutes, until golden. Cool on trays.
