Coronation chicken and potato salad
We vote to bring this classic curried chicken dish back into fashion - it still looks and tastes fantastic in its individual lettuce cups.
Ingredients (14)
- 2 teaspoons vegetable oil
- 1 onion, finely chopped
- 1 tablespoon Sharwood's Mild Curry Paste
- 1 teaspoon tomato paste
- 1/3 cup (80ml) red wine
- 1 tablespoon Sharwood's Mango & Ginger Chutney, plus extra to serve
- 1 tablespoon lemon juice
- 300g egg mayonnaise
- 1 tablespoon chopped fresh coriander, plus extra leaves to serve
- 100ml thickened cream
- 1kg cooked chicken meat, shredded
- 1 butter lettuce
- 2 tablespoons toasted almonds, finely chopped
- 100g pkt Sharwood's Mini Puppodums

1.Heat oil in a saucepan over medium heat. Cook onion for 1-2 minutes or until soft. Add Sharwood's Mild Curry Paste and cook, stirring, for 1 minute.

2.Add tomato paste, wine, Sharwood's Mango & Ginger Chutney, lemon juice and 1/4 cup (60ml) water, and cook, stirring, for 5 minutes. Allow to cool. Process in a food processor with mayonnaise, coriander and cream until combined.

3.Combine chicken and sauce in a bowl. Place lettuce leaves on plates. Spoon chicken mixture into lettuce, garnish with extra coriander and nuts.

4.Serve with Sharwood's Mini Puppodums and extra Chutney, and a wedge of lemon, if desired.
