Light salads are the language of summer, and this dish from Rick Stein makes no compromises on flavour.

Ingredients (10)

  • 1 large cos or romaine lettuce, cut into rough 8cm pieces
  • 4 long green shallots, finely chopped
  • 1/4 bunch dill, leaves picked

Dressing

  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tsp red wine vinegar
  • 2 tsp lemon juice
  • 1 garlic clove, crushed
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano, Greek if possible
  • 1 tsp runny honey

Method

  • 1.
    Place the lettuce, long green shallot and dill in a large bowl.
  • 2.
    For the dressing, place all of the ingredients with 1/2 tsp salt in a bowl, season to taste and whisk to combine. Add half of the dressing to the lettuce, season, and toss to combine. Transfer to a large bowl and drizzle with remaining dressing to serve.
