Cos lettuce and green onions with dill and oregano
Light salads are the language of summer, and this dish from Rick Stein makes no compromises on flavour.
Ingredients (10)
- 1 large cos or romaine lettuce, cut into rough 8cm pieces
- 4 long green shallots, finely chopped
- 1/4 bunch dill, leaves picked
Dressing
- 1/4 cup (60ml) extra virgin olive oil
- 2 tsp red wine vinegar
- 2 tsp lemon juice
- 1 garlic clove, crushed
- 1 tsp Dijon mustard
- 1 tsp dried oregano, Greek if possible
- 1 tsp runny honey

1.Place the lettuce, long green shallot and dill in a large bowl.

2.For the dressing, place all of the ingredients with 1/2 tsp salt in a bowl, season to taste and whisk to combine. Add half of the dressing to the lettuce, season, and toss to combine. Transfer to a large bowl and drizzle with remaining dressing to serve.
