Crispy calamari bao

Ingredients (8)
- 400g frozen crumbed calamari rings
- Cooking oil spray
- 10 frozen bao buns
- 125g baby cucumbers, thinly sliced
- 1/2 cup small coriander sprigs
- 2 little gem lettuce, leaves separated
- 2 long red chillies, deseeded and shredded into thin strips
- Kewpie sriracha mayonnaise and lime wedges, to serve

1.Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Place frozen calamari onto prepared tray and spray with oil. Bake according to packet instructions (about 10-12 minutes).

2.Place frozen bao on 2 large plates and cover with plastic wrap. Microwave each plate on high for 1 minute or until bao are puffed and heated through.

3.Carefully open bao and fill with calamari (cutting any larger calamari in half to fit), cucumber and coriander.

4.Divide filled bao and lettuce leaves between serving plates and sprinkle with chilli. Serve drizzled with Kewpie sriracha and lime wedges alongside.
