Crunchy and golden on the outside, gooey and cheesy on the inside... These crispy mozzarella sticks are the perfect snack, entree or share plate when youre feeding a crowd. Plus, dont skimp on the hot honey sauce for a decadent bite!

Crispy mozzarella sticks with hot honey

Ingredients (6)

  • 350g firm mozzarella ball
  • 7 sheets filo pastry, halved widthways (see recipe notes)
  • 100g butter, melted
  • Thyme leaves, to sprinkle
  • 1/2 cup (200g) runny honey
  • 2-3 tsp crushed chilli (to taste)

  • 1.
    Cut mozzarella into 1.5cm-thick slices. Cut each slice into 1.5cm-thick sticks (see recipe notes).
  • 2.
    Place half a sheet of filo on a board and generously brush with butter. Place mozzarella along the centre of the closest edge to you. Season with salt flakes and freshly ground black pepper. Sprinkle with thyme. Fold sides of pasty to enclose cheese. Brush pastry with butter and roll up tightly. Brush again with butter. Repeat with remaining 13 half sheets, butter and cheese (see recipe notes).

    When ready to serve, place rolls in the basket of an air fryer (see recipe notes) and bake at 200°C for 8 minutes, or until golden and crisp (cheese will start to ooze out).
  • 4.
    Meanwhile, heat the honey in a small frypan over high heat until bubbly. Add the crushed chilli and stir to combine.
  • 5.
    Arrange crispy rolls on a serving plate, drizzle with hot honey and serve immediately.

Recipe Notes

Keep the filo covered with a damp tea towel so it doesn’t dry out. Reroll any remaining sheets tightly in plastic wrap and store in the fridge for up to 1 week.

The shape of the mozzarella ball means you won’t get all perfect sticks. It doesn’t matter – simply put 2 smaller pieces together when assembling, if necessary.  

You can assemble the mozzarella sticks ahead of time. Arrange on a tray, making sure they don’t touch, and enclose in plastic wrap. Chill until ready to bake.

Depending on the size of your air fryer, you may need to bake the mozzarella sticks in batches. It’s better if the rolls don’t touch each other in the basket (they can be very close, though). Keep the first batch warm on a baking tray in a 120°C/100°C fan-forced oven while you bake the second batch.
