"Spoon sweets are a great tradition in Greece. When I had these (made from the sticky Muscat grapes I was buying from the shop around the corner) with yoghurt in Symi, I thought: this is just the sort of pudding I always choose. It is still very nice made with standard red or white grapes from the supermarket, flavoured with lemon or orange." – Rick Stein

Ingredients (4)

  • 500g seedless green grapes
  • 300g caster sugar
  • Zest of 1/2 lemon, plus 100ml lemon juice
  • Greek yoghurt, to serve

Method

    Place the grapes, sugar, lemon zest, juice and 100ml water into a medium heavy- based saucepan and bring to the boil over high heat. Reduce heat to medium-low and simmer for 1 hour 15 minutes – 1 hour 30 minutes, stirring frequently, until the consistency starts to turn jammy. Remove from the heat and stir in 1 tbs warm water to loosen. Allow mixture to cool completely in the fridge. Serve in spoons with yoghurt alongside.
