Greenlip abalone with green coconut curry
It couldn't be easier, two steps and you're done.
Ingredients (12)
- 2 tbs coconut oil
- 1/3 cup (100g) green curry paste
- 400ml can coconut milk
- 1/4 cup (60ml) fish or vegetable stock
- 1 tbs fish sauce
- 1 tbs oyster sauce
- 4 greenlip abalone, cleaned
- Finely grated zest of 1 lime, plus extra wedges to serve
- Juice of 1 lime
To serve
- 1 long red chilli, thinly sliced
- Baby shiso
- Baby coriander

1.Heat coconut oil in a small saucepan over low heat. Add curry paste and cook, stirring occasionally, for 10-12 minutes or until paste is roasted. Stir in coconut milk, stock, fish sauce and oyster sauce. Increase heat to medium and simmer for 4-5 minutes.

2.Add cleaned whole abalone and simmer in sauce for 4-5 minutes or until abalone is just cooked. Remove pan from heat and stir in lime zest and juice. Remove abalone from sauce and drain excess sauce from abalone. Stand for 5 minutes then slice very thinly and place in a serving bowl. Season, then drizzle with coconut sauce. Scatter with sliced chilli, baby shiso and baby coriander. Serve immediately with lime wedges alongside.
