This simple potato salad is a great side when entertaining, or a perfect way to use up Christmas leftovers.

Ingredients (5)

  • 900g Desiree or King Edward potatoes, peeled, cut into 2cm pieces
  • 30g unsalted butter
  • 500g duck fat or goose fat, or lard
  • Sliced ham, to serve
  • Mustards and condiments (such as mustard fruits and preserved quince), to serve

Method

  • 1.
    Place potatoes in a saucepan of cold salted water, bring to boil, then cook for 2 minutes. Drain, return to pan and shake vigorously (this roughens the potatoes and help them to crisp).
  • 2.
    Heat butter and fat or lard in a large frypan over medium heat. When hot, add potatoes and cook (in batches if necessary) for 2-3 minutes each side until crisp and golden, turning to ensure even cooking. Drain on paper towel, sprinkle with sea salt and serve with ham and condiments.
