Healthy no nut muesli slice

Ingredients (11)

  • 2 tbs each of chia and linseeds
  • 2 oranges, zest finely grated, juiced (you will need ⅔ cup juice, see notes)
  • 1 tsp freshly grated nutmeg
  • 3 large eggs, at room temperature, lightly whisked
  • 1/3 cup (80ml) raw honey (see notes)
  • 1/3 cup (80ml) coconut oil
  • 3 cups (270g) rolled oats
  • 3/4 cup (65g) desiccated coconut
  • 3/4 cup (120g) pepitas
  • 2 tbs white or black sesame seeds
  • 1/4 cup (40g) wholemeal self-raising flour

Method

  • 1.
    Preheat oven to 160C/140C fan-forced. Line base and sides of a 20cm x 30cm straight-sided lamington pan with baking paper, making sure that the two long sides extend 2cm above the edge of the pan.
  • 2.
    Place the seeds, zest and juice in a large bowl and stir to combine. Stand for 3 minutes or until seeds are starting to soften and mixture looks slightly thickened thickened. Use a fork to whisk in nutmeg and eggs.
  • 3.
    Place honey and oil together in a heatproof jug and microwave on high in 30 second bursts for 1 ½ minutes to warm through and melt the oil. Stir well, then add to egg mixture in bowl, stirring to combine.
  • 4.
    Add all remaining ingredients and stir well to combine. Spoon into prepared pan, pressing down firmly to cover the base evenly and to level the top.
  • 5.
    Bake for 40 minutes or until slice has set firm and top is golden. Transfer to a wire rack and cool completely in pan. Remove and slice into 12 pieces.
  • 6.
    Serve or store in an airtight container in a cool, dark place for up to one week.

Recipe Notes

Use cold tap water to top up your amount of juice if needed to make the 2/3 cup measure. Raw honey is a true superfood and one of the best natural sweeteners. It’s packed with enzymes, antioxidants and nutrients. One tablespoon of raw honey has less impact on glycemic load than a single banana. Once pasteurised, honey loses many of its benefits. The darker the honey, the richer the flavour and the greater the nutrition benefits.
