The perfect addition to any weekend barbecue.

Ingredients (6)

  • 250g unsalted butter, softened
  • 1/2 cup rosemary leaves, finely chopped
  • 1/2 cup flat-leaf parsley leaves, finely chopped
  • 1/2 small garlic clove, finely chopped
  • Finely grated zest of 1/2 a lime, plus wedges to serve
  • 20 extra-large king prawns, halved lengthways

Method

  • 1.
    Whiz butter, rosemary, parsley, garlic, lime zest and 1/2 tsp salt flakes in a food processor until well combined. Set aside.
  • 2.
    Heat a barbecue or chargrill pan to high heat.
  • 3.
    Brush rosemary and lime butter over the prawn meat. Grill prawns, cut-side up, without turning, for 4-5 minutes until just cooked through. Transfer to a large platter and serve with lime wedges.
