Lemongrass and ginger turkey mince stir-fry

Aromatic spices meet tender turkey mince and crisp vegetables in flavour-packed stiry-fry. Quick and easy to prepare, this dish is perfect for a delicious weeknight meal, served with steamed jasmine rice and a squeeze of lime.

Ingredients (16)

  • 2 tbs vegetable oil
  • 1 tbs lemongrass paste
  • 1 tbs ginger paste
  • 1 tbs garlic paste
  • 500g turkey mince
  • 1 red capsicum, thinly sliced
  • 125g sugar snap peas, trimmed
  • 1 bunch broccolini, halved lengthways if large
  • 1 long red chilli, thinly sliced (optional)
  • 2 tbs soy sauce
  • 1 tbs fish sauce
  • 1 tbs lime juice
  • 1 tsp runny honey
  • Coriander leaves, to garnish
  • Steamed jasmine rice, to serve
  • Lime wedges, to serve

Method

    Heat the oil in a large wok or frypan over medium-high heat. Add the lemongrass, ginger and garlic pastes, and stir-fry for 1-2 minutes until fragrant. Add the turkey mince and cook, breaking mince up with a wooden spoon, for 5-6 minutes or until browned. Stir in the capsicum, sugar snap peas, broccolini and chilli, if using, and stir-fry for a further 3-4 minutes until the vegetables are tender-crisp.

    Meanwhile, combine the soy sauce, fish sauce, lime juice and honey in a small bowl. Pour the sauce over the turkey and vegetables. Stir-fry for 1-2 minutes until the sauce is heated through and everything is well coated in the sauce.
  • 3.
    Garnish with coriander leaves and serve with steamed jasmine rice and lime wedges.
