Lime and passionfruit melting moments
This melting moments recipe couldn't get easier, and the fruity spin on this classic dessert makes the treat even better.
Ingredients (9)
- 170g unsalted butter, softened
- 100g pure icing sugar, sifted, plus extra, to dust
- 1 tsp vanilla extract
- 260g plain flour, sifted
- 30g custard powder, sifted
- 1 tbs lemon juice
Passionfruit filling
- 1 cup (120g) pure icing sugar, sifted
- 1 tbs passionfruit pulp
- Finely grated zest of 1 lime

1.Preheat oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper.

2.Place the butter, sugar and vanilla in a stand mixer fitted with the paddle attachment and beat until pale and fluffy. Beat in flour, custard powder and lemon juice until just combined.

3.Using 1 tbs of mixture at a time, roll into balls, place 4cm apart on prepared trays, and gently press with a lightly floured fork. Bake, swapping trays halfway, for 14-16 minutes, until faintly golden. Cool.

4.For the filling, beat all ingredients together in a bowl to form a stiff icing. Spread over half the biscuits, then sandwich with remaining biscuits. Dust with extra icing sugar to serve.
