Elegant, delicious and easy to make, these truffles are sure to be your next favourite.
What you need to know before you start
You’ll need to begin this recipe at least 4 hours before you’re ready to serve. This is to allow the limoncello flavour to develop and the mixture to firm up in the fridge. Once rolled, the balls will need a further 30 minutes in the fridge to firm up again.
This no-bake recipe requires basic baking equipment such as a small saucepan, a mixing bowl, a spoon, measuring cups, a flour sifter and a microplane to zest the lemon. If you plan to give these truffles as edible gifts, you may want to gather some gifting supplies like food-safe containers, swing tags and twine.
Why are these the best limoncello and white chocolate truffles?
While basic traditional chocolate truffles may just contain chocolate melts, butter and cream, this recipe packs a punch thanks to a secret ingredient – limoncello.
Famously used throughout the world as an aperitif or digestif, limoncello is made with lemon zest and accompanied with sugar, water and a neutral alcohol such as vodka. Hailing from the south of Italy, its sweet, smooth and boozy flavour profile lifts these white chocolate truffles to give you a zesty spin on a classic Christmas treat. Just be careful not to add too much, or the truffles will not set due to the alcohol content.
You can purchase pre-made limoncello at liquor stores, or you can even try your hand at making your own batch with our recipe.
What kind of chocolate is best for truffles?
Chocolate melts are the best kind of chocolate to use for truffles. Melting and managing white chocolate can be more difficult due to its high sugar and milk content, which makes it more prone to seizing and burning. We use white chocolate melts in this recipe as they are a more reliable and consistent product. These are ideal for baking and other sweet recipes as they contain vegetable fats instead of cocoa butter, meaning they don’t require the process of tempering to create that luscious glossy finish.
Can children enjoy these limoncello truffles?
Unfortunately, as limoncello is an alcoholic beverage, your little ones will not be able to enjoy these. However, feel free to make an alcohol-free version by substituting the limoncello with non-alcoholic sparkling wine, lemon cordial or lemon-flavoured soda water.
What ingredients you’ll need
Pure cream: Pure cream provides a rich, velvety texture that gives the truffles their smooth, melt-in-your-mouth consistency.
Salted butter: This adds a creamy, indulgent flavour while balancing the sweetness of the white chocolate with a subtle hint of savouriness.
White chocolate melts: White chocolate melts into a smooth, luxurious base that forms the body of the truffles while imparting hints of vanilla.
Limoncello: This liqueur infuses the truffles with a tangy, citrussy kick, giving them a distinct, refreshing lemon flavour.
Icing sugar: Icing sugar is combined with lemon zest to coat the truffle balls for a sweet and zesty bite.
Lemon: The zest of the lemon is used for its intense bright, tangy and sharp flavour.
What is the trick to melting chocolate?
Melt the chocolate over a pan of gently simmering water (called a bain-marie) to ensure a smooth and consistent product. Be careful to ensure the base of the bowl does not touch the water as this will heat the chocolate too quickly, causing it to seize or burn.
Once all the ingredients have been combined, leave the mixture to firm up in the fridge for roughly 3 hours. If you find the mixture is too soft to handle, feel free to return it to the refrigerator for 10 minutes.
How to store limoncello and white chocolate truffles
Store limoncello chocolate truffles in an airtight container in the fridge for up to 7 days, or in the freezer for up to 3 months. Thaw in the refrigerator before serving. You may find you need to reroll some of the balls, as they can become misshapen as they defrost.
If you’re gifting these edible truffles this festive season, secure them in gift bags or boxes, and instruct your guests to store them in the fridge for safe keeping.
What to serve with limoncello and white chocolate truffles
These little limoncello and white chocolate truffles present beautifully on a platter at the end of a long lunch or dinner. Serve it with fresh seasonal berries or even a couple of scoops of ice cream for an indulgent end to your meal. For a savoury finish, opt for a cheese board with your favourite cheeses, dips and crackers alongside the truffles.
