Ingredients (10)

  • 30ml gin
  • 10ml lychee syrup (see notes)
  • 15ml Chambord Liqueur
  • 22.5ml lime juice (see notes)
  • 1 1/2 tsp aquafaba (see notes)
  • Ice cubes, to shake
  • Freeze-dried raspberries (crushed to a powder) and fresh lychee (substitute canned lychee), to garnish

Strawberry saffron syrup

  • 1/3 cup (75g) caster sugar
  • 3 large strawberries, finely chopped
  • Pinch saffron

Method

    For the syrup, place all ingredients in a small saucepan with 1/3 cup (80ml) water and bring to the boil over medium-high heat, stirring until sugar dissolves. Set aside to cool. Strain into a jar and chill until ready to use.

    Combine gin, lychee syrup, Chambord and lime juice in a cocktail shaker. Give the mix a vigorous shake, without ice, to emulsify and mix the ingredients.
  • 3.
    Add the aquafaba, 15ml strawberry saffron syrup and some ice cubes. Shake until well chilled.
  • 4.
    Double-strain the mixture into a chilled coupe glass to ensure a smooth, silky texture. Garnish with crushed freeze-dried raspberries and a lychee.

Recipe Notes

You can use lychee syrup from a can of lychees in syrup. If not using a cocktail jigger with a specific 22.5ml measurement for the lime juice, measure out 4-5 tsp to taste. Aquafaba is the liquid found in a can of chickpeas. The strawberry saffron syrup makes 1/2 cup (125ml) and will keep in the fridge for up to 1 month. It’s also great for smoothies and fruit mocktails.
