“I came up with this recipe one New Year’s Eve about 15 years ago to serve at a party. The idea of marinating raw tuna in passionfruit juice seemed very Aussie to me, but I quickly realised there wasn’t enough acidity to make this a ceviche, so I added lime juice as well as chilli and coriander to give it a slightly Asian feel.

Ingredients (8)

  • 500g skinless salmon fillet, pin-boned
  • 2 passionfruit
  • 3 tsp lime juice
  • 1/2 tsp fish sauce
  • 45ml sunflower oil
  • 1 long green chilli, finely chopped
  • 3 tsp caster sugar
  • Small handful coriander, finely chopped

Method

  • 1.
    Put the piece of salmon fillet on a board and slice it across into very thin slices. Lay the slices, side by side on 4 dinner plates. Cover each one with cling film and set them aside in the fridge for at least an hour, or until you are ready to serve.
  • 2.
    Shortly before serving, make the dressing. Cut the passionfruit in half and scoop the pulp and seeds into a bowl. Stir in the lime juice, fish sauce, sunflower oil, green chilli, sugar and coriander, then season with 1/2 tsp salt flakes and some freshly ground black pepper.
  • 3.
    To serve, uncover the plates, spoon over the dressing and spread it over the surface of the fish with the back of the spoon. Leave for 10 minutes before serving.
