Mediterranean tuna salad

Inspired by the flavours of the med, this simple tuna salad is a refreshing and nutritious meal that's ready in just 30 minutes. Packed with vibrant flavours, wholesome farro and a zesty vinaigrette, an unassuming can of tuna is the real star of the show.
Ingredients (14)
- 250g packet farro
- 250g punnet cherry tomatoes, quartered
- 1 cucumber, thinly sliced on an angle
- 1/2 cup (60g) pitted green Sicilian olives, halved
- 100g marinated feta cubes
- 1/2 red onion, thinly sliced (we used a mandoline)
- 1/3 cup flat-leaf parsley, chopped
- 2 x 125g cans tuna slices in olive oil, drained
Vinaigrette
- 1/4 cup (60ml) lemon juice
- 1 1/2 tbs red wine vinegar
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1 tsp Dijon mustard
- 1 tbs extra virgin olive oil

1.Cook farro according to packet instructions until tender. Drain and set aside to cool.

2.For the vinaigrette, in a small bowl, whisk lemon juice, red wine vinegar, oregano, basil and mustard. Gradually whisk in the oil until well combined. Season to taste.

3.In a large bowl, combine the cooked farro, cherry tomatoes, cucumber, olives, feta, red onion and parsley. Drizzle the vinaigrette over the salad and toss gently to combine.

4.Divide between serving plates and serve with tuna flaked over the top.
Recipe Notes
Farro can take up to 60 minutes to cook, but there are quickcook versions available at supermarkets that take only 10 minutes.
