Ingredients (7)

  • 1/3 cup (80ml) dark soy sauce
  • 2 tbs miso paste*
  • 500g mixed mushrooms (such as button, shiitake and oyster), halved if large
  • 175g snow peas, trimmed, thinly sliced
  • 4 spring onions, thinly sliced
  • 1 sheet nori seaweed*, torn into pieces
  • 270g packet dried udon noodles*

Method

  • 1.
    Whisk the soy sauce and miso with 1.5L (6 cups) water in a large pan. Place over high heat and bring to the boil. Reduce heat to low, add mushrooms and simmer gently for 5 minutes or until tender. Stir in snow peas, spring onion and seaweed.
  • 2.
    Meanwhile, cook noodles according to packet instructions. Drain. Divide among bowls, then ladle over broth and serve.
