Ingredients (16)

  • 4 x 200g 100% beef medium-grind patties (ask your butcher to grind it for you)
  • 8 slices burger cheese or cheddar
  • 4 fresh sesame milk buns
  • 1/3 cup (80g) softened butter
  • 1/3 cup diced white onion
  • 4 butter lettuce leaves
  • 1 large gherkin, sliced
  • 1 heirloom tomato, sliced

Sauce

  • 160g mayonnaise
  • 1 tbs pickle juice
  • 1 tbs ketchup
  • 1 tbs yellow mustard
  • Pinch of paprika
  • Pinch of onion powder
  • Pinch of garlic powder
  • Pinch of white pepper

Method

  • 1.
    To make the sauce, combine all ingredients and a pinch of salt, mix well and season to taste.
  • 2.
    To make the burgers, heat charcoal grill to very hot and season patties. Grill until cooked to your liking then top each with 2 slices of cheese and set aside to rest.
  • 3.
    Slice buns, spread with a little butter and grill, cut-side down, until golden. Dollop buns with burger sauce on both halves.
  • 4.
    Add patties, onions, lettuce, gherkin and tomato to bottom bun halves. Top with top bun halves, pressing down lightly.
