Ingredients (16)
- 4 x 200g 100% beef medium-grind patties (ask your butcher to grind it for you)
- 8 slices burger cheese or cheddar
- 4 fresh sesame milk buns
- 1/3 cup (80g) softened butter
- 1/3 cup diced white onion
- 4 butter lettuce leaves
- 1 large gherkin, sliced
- 1 heirloom tomato, sliced
Sauce
- 160g mayonnaise
- 1 tbs pickle juice
- 1 tbs ketchup
- 1 tbs yellow mustard
- Pinch of paprika
- Pinch of onion powder
- Pinch of garlic powder
- Pinch of white pepper

1.To make the sauce, combine all ingredients and a pinch of salt, mix well and season to taste.

2.To make the burgers, heat charcoal grill to very hot and season patties. Grill until cooked to your liking then top each with 2 slices of cheese and set aside to rest.

3.Slice buns, spread with a little butter and grill, cut-side down, until golden. Dollop buns with burger sauce on both halves.

4.Add patties, onions, lettuce, gherkin and tomato to bottom bun halves. Top with top bun halves, pressing down lightly.
