Passionfruit spritz cocktail

“A boozy punch for a hot summer’s day, with loads of floral sweetness and acidity courtesy of the passionfruit.” – Tom Gorringe

Ingredients (6)

  • 16 passionfruit
  • 4 cups (1L) each ginger ale and pineapple juice
  • 750ml bottle each Australian sparkling wine and white rum
  • 100ml each freshly squeezed lemon and lime juice
  • 1/2 bunch mint, leaves picked
  • Ice cubes, to serve

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Halve the passionfruit and scoop the pulp into a large punch bowl. Add remaining ingredients and mix well. Serve.
