Let the good times bowl with this fruity, fresh concoction.

Ingredients (9)

  • 6 Earl Grey tea bags
  • 1/2 cup (110g) caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 3 cups (750ml) sparkling white wine
  • 1/3 cup (80ml) gin

To serve

  • Crushed ice
  • Lemon thyme sprigs
  • Thinly sliced yellow peaches
  • Raspberries

Method

  • 1.
    Combine tea, sugar, vanilla pod and seeds and 4 cups (1L) water in a saucepan and bring to the boil, stirring until sugar is dissolved. Transfer to a heatproof bowl and stand for 10 minutes to infuse. Discard tea bags and chill until completely cooled.
  • 2.
    Add cooled tea mixture and all remaining ingredients to a large jug or punch bowl and serve immediately.
