Pina Princess
This refreshing cocktail is from Sydney's Hacienda bar in Circular Quay and is great for weekend afternoon drinks in the sun.
Ingredients (6)
- 70ml Pina colada mix
- 20ml passionfruit puree
- 20ml lime Juice
- 15ml chai syrup
- Ginger beer to top up
- Pineapple leaf, passionfruit or lime shell and sugar cube with overproof rum on fire to garnish

1.Combine all ingredients in a cocktail shaker.

2.Shake and strain into a high ball tiki glass or glass of your choice, and top up with crushed ice and ginger beer.
