Potato bake
The potato is the king of comfort food. Give it the royal treatment it deserves and make this cheesy, creamy potato bake tonight.

Ingredients (5)

  • 1.25kg white potatoes, peeled
  • 300ml thickened cream
  • 1 garlic clove, crushed
  • 150g Gruyere (or tasty cheese), grated
  • Fresh thyme sprigs, to serve

Method

  • 1.
    Preheat oven to 180°C/160°C fan-forced. Grease a 6 cup-capacity (1.5L) baking dish.
  • 2.
    Using a mandoline or knife, cut potatoes into very thin slices. Combine cream and garlic in a jug. Season well with salt flakes and freshly ground black pepper.
  • 3.
    Arrange half the potato in prepared baking dish. Pour over half the cream mixture. Repeat with remaining potato and cream mixture. Cover dish tightly with foil. Bake for 1 hour 15 minutes.
  • 4.
    Increase temperature to 200°C/180°C fan-forced. Remove foil from baking dish and sprinkle potato with cheese. Bake for 15-20 minutes until the cheese is melted and golden. Stand for 10 minutes.
  • 5.
    Serve potato bake sprinkled with thyme.
