The potato is the king of comfort food. Give it the royal treatment it deserves and make this cheesy, creamy potato bake tonight.
Ingredients (5)
- 1.25kg white potatoes, peeled
- 300ml thickened cream
- 1 garlic clove, crushed
- 150g Gruyere (or tasty cheese), grated
- Fresh thyme sprigs, to serve

1.Preheat oven to 180°C/160°C fan-forced. Grease a 6 cup-capacity (1.5L) baking dish.

2.Using a mandoline or knife, cut potatoes into very thin slices. Combine cream and garlic in a jug. Season well with salt flakes and freshly ground black pepper.

3.Arrange half the potato in prepared baking dish. Pour over half the cream mixture. Repeat with remaining potato and cream mixture. Cover dish tightly with foil. Bake for 1 hour 15 minutes.

4.Increase temperature to 200°C/180°C fan-forced. Remove foil from baking dish and sprinkle potato with cheese. Bake for 15-20 minutes until the cheese is melted and golden. Stand for 10 minutes.

5.Serve potato bake sprinkled with thyme.
