I like to have everything prepped and ready a day ahead, storing all the sliced vegetables, lettuce leaves and herbs separately in airtight containers, layered with damp paper towels, and keeping it all chilled until ready to serve or transport.” – Kerrie McCallum
Ingredients (7)
- 1 cup (250ml) classic cocktail sauce (see notes)
- 2kg cooked large tiger prawns
- 6 baby green gem lettuce, leaves separated
- 2 bunches radish, halved or quartered lengthwise
- 1/2 bunch celery, stalks trimmed and separated, inner pale leaves reserved
- Sprigs of French tarragon, dill and chervil
- 6 limes, cut into wedges

1.Place cocktail sauce in a small serving bowl and place on a very large wooden serving board. Layer all the remaining ingredients on the board, making sure that they’re easily accessible from all sides. Serve immediately.
