Prawn cocktail lettuce tacos with Bloody Mary mayonnaise

Sean Connolly shares his take on the classic retro prawn cocktail.
Ingredients (10)
- 2 baby cos lettuce, leaves separated (you’ll need 16 leaves)
- 16 cooked king prawns, peeled, deveined, tails removed, cut into 1cm chunks
- 1/3 cup (65g) salmon roe
- 1 bunch of chives, finely chopped
- Lemon wedges, to serve
Bloody Mary mayonnaise
- 1/2 cup (150g) whole egg mayonnaise
- 2 tsp tomato sauce
- 2 tsp Worcestershire sauce
- 1 tsp tabasco sauce
- 1/4 tsp celery salt

1.For the Bloody Mary mayonnaise, combine all ingredients in a bowl. Arrange lettuce on a platter. Divide prawns among lettuce cups. Spoon over mayonnaise. Top each with roe, chives and a squeeze of lemon juice to serve.
