Psari kleftiko (baked fish parcels)

Ingredients (11)
- 1 tbs extra virgin olive oil
- 20g butter
- 3 large brown onions, roughly chopped
- 2 red bullhorn peppers (or capsicums), roughly chopped
- 2 garlic cloves, crushed
- 1 bunch of flat-leaf parsley, chopped
- 6 x 250g firm white fish fillets, such as cod, rockling or John Dory
- 1 tsp smoked paprika, for sprinkling
- 1 tsp dried oregano, for sprinkling
- Balsamic glaze, for drizzling
- Pinch of chilli flakes (optional)

1.Preheat oven to 180°C (160°C fan-forced).

2.Heat the olive oil and butter in a large frypan over medium heat. Add the onion and cook for about 5 minutes, until soft and translucent, then add the peppers and cook for 5-8 minutes, until starting to caramelise. Add the garlic and cook for 1-2 minutes, until fragrant, then add the parsley and cook, stirring, for 2 minutes. Season with salt and pepper, then remove from the heat and set aside.

3.Sprinkle both sides of the fish fillets with paprika, oregano, salt and pepper to taste.

4.Tear off 6 squares of baking paper large enough to wrap each fish fillet individually.

5.Place a fish fillet in the centre of each square of baking paper, then evenly spoon the cooked onion and pepper mixture over the fish. Drizzle a little balsamic glaze over the top and finish with a few chilli flakes (if desired). Fold over the top and sides of each baking paper square to form a well-sealed pouch, then transfer to a large baking tray. Bake for 15-20 minutes (the cooking time will depend on the thickness of the fish), until the fish is opaque and just cooked through.

6.Divide the fish parcels among plates and serve with your choice of sides.
