Tracey puts her tapenade to use in this easy canape.

Ingredients (7)

  • 1 (250g) small baguette, thickly sliced diagonally
  • 2 tbs extra virgin olive oil
  • 2 garlic cloves, halved
  • 1 cup (235g) Sicilian tapenade (see note)
  • Rocket leaves, to serve
  • Shaved pecorino, to shave
  • 1 small lemon, halved, to serve

Method

  • 1.
    Preheat oven to 220°C/200°C fan-forced.
  • 2.
    Drizzle both sides of bread with oil and arrange bread on 2 large baking trays in a single layer. Bake for 10-12 minutes until golden and crisp. Remove and immediately rub both sides of hot bread with the cut sides of garlic and season with salt flakes.
  • 3.
    Transfer warm crostini to a serving plate, spoon over tapenade and top with rocket and pecorino. Season with freshly ground black pepper and serve with a squeeze of lemon.
