Ingredients (7)

  • 1kg broccoli stalks (floret stems or main stalks)
  • 100g unsalted butter
  • 2 tbs extra virgin olive oil
  • 3 anchovies
  • Pinch of dried chilli flakes
  • 2 garlic cloves, crushed
  • Zest of 1 lemon

Method

  • 1.
    Bring a large saucepan of salted water to the boil. Add broccoli stalks and blanch for 2 minutes. Strain, then when cool enough to handle, chop into small pieces.
  • 2.
    Wipe out pan and return to medium heat. Add butter and oil and cook until melted, then add anchovies, chilli flakes and garlic and cook, stirring regularly, for 2 minutes or until fragrant.
  • 3.
    Add broccoli stalks and stir to coat, then reduce heat to low, cover with a lid, and cook, stirring occasionally, for 35-40 minutes until broccoli is tender and broken down.
  • 4.
    Serve topped with lemon zest.
