Slow-cooked broccoli stalks

Ingredients (7)
- 1kg broccoli stalks (floret stems or main stalks)
- 100g unsalted butter
- 2 tbs extra virgin olive oil
- 3 anchovies
- Pinch of dried chilli flakes
- 2 garlic cloves, crushed
- Zest of 1 lemon

1.Bring a large saucepan of salted water to the boil. Add broccoli stalks and blanch for 2 minutes. Strain, then when cool enough to handle, chop into small pieces.

2.Wipe out pan and return to medium heat. Add butter and oil and cook until melted, then add anchovies, chilli flakes and garlic and cook, stirring regularly, for 2 minutes or until fragrant.

3.Add broccoli stalks and stir to coat, then reduce heat to low, cover with a lid, and cook, stirring occasionally, for 35-40 minutes until broccoli is tender and broken down.

4.Serve topped with lemon zest.
