Spanner crab with gala apple and sorrel
Ingredients (6)
- 1 (around 600g) live spanner crab
- Juice of 1/2 a mandarin
- 2 tbs extra virgin olive oil
- 1 gala apple, cut into matchsticks
- 1 rose apple (from Asian food shops – substitute extra gala apple), cut into matchsticks
- 1/2 bunch sorrel

1.Freeze crab for 2 hours to put it to sleep. Weigh crab and note its weight (the weight in 100g increments represents the crab cooking time, plus 2 more minutes; for example, if the crab weighs 600g, this equals 6 minutes plus 2 minutes for an 8-minute cooking time).

2.To cook the crab, fill a large saucepan with generously salted water and bring to a rapid boil. Add crab, cover and boil for the calculated time. Using tongs, transfer cooked crab to a tray and stand for 5-10 minutes to rest.

3.Carefully remove crab head over a bowl, being sure not to shatter any shell, and collect juice. Strain juice through a sieve into a jug. Pick all meat from crab and set aside.

4.Whisk mandarin juice, oil and crab juice together. Arrange apple, sorrel leaves and crab meat on a serving plate. Drizzle with dressing and serve immediately.
