Steamed pork ribs with black bean and chilli
Ingredients (12)
- 400g cross-cut pork spare ribs (ask your butcher to do this), cut into 4cm pieces
- 1 small red chilli, thinly sliced, plus extra to serve
- 1 tsp sesame oil
Marinade
- 4 garlic cloves, finely chopped
- 1 tbs soy sauce, plus extra to serve
- 1 tbs Chinese rice wine (shaohsing – from Asian food shops)
- 1 tbs Chinese salted black beans (from Asian food shops – substitute drained black bean garlic sauce), rinsed, drained
- 2 tsp caster sugar
- Pinch of ground white pepper
- 1 tbs cornflour
To serve
- Baby coriander
- Crispy chilli in oil (from Asian food shops)
Method

1.For the marinade, combine all ingredients in a bowl. Add pork, cover and chill for 4 hours or overnight.

2.When ready to cook, stir chilli and sesame oil through pork mixture and transfer to a heatproof plate large enough to fit inside a steamer basket.

3.Place plate in steamer, then sit steamer over a wok or saucepan of simmering water. Cover and steam for 10-12 minutes or until pork is cooked through.

4.Scatter pork with baby coriander and extra chilli, and serve with crispy chilli in oil.
