Stone fruit slushie cocktail

This is not your standard slushie! This chilly adult's-only drink is perfect for warm summer days and nights.
Ingredients (6)
- 5 yellow nectarines (substitute peaches), halved, stones removed
- 1/4 bunch mint, leaves picked, plus extra sprigs to serve
- 300g caster sugar
- 10g citric acid (from supermarkets)
- 3 cups (750ml) dark rum
- 150ml orgeat syrup (from bottle shops)
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Heat a chargrill pan over high heat. Grill nectarines for 1 minute each side or until lightly charred, then set aside to cool.

2.Blanch half the mint leaves in boiling water for 10 seconds, then refresh under cold water.

3.Combine sugar and citric acid in a blender with 800ml hot water and whiz to dissolve. Add the nectarines and blanched mint and whiz until smooth. Pour into ice cube trays and freeze overnight.

4.Place half the rum, half the orgeat and half the nectarine ice cubes in a blender. Whiz until combined and smooth, then pour into glasses. Repeat with remaining rum, orgeat and fruit ice cubes. Garnish with mint sprigs. Serve immediately.
