Sweet soy tuna with green tea noodles

Sweet soy seared tuna sits on a bed of delicate and earthy green tea noodles in this Japanese-inspired dish.
Ingredients (11)
- 4 tablespoons soy sauce
- 4 tablespoons mirin
- 4 tablespoons sake
- 1 tablespoon palm sugar
- 1 tablespoon grated fresh ginger
- 2 garlic cloves, crushed
- 4 (about 130g each) tuna steaks
- 200g packet green tea noodles
- 1 teaspoon sesame oil
- 1 tablespoon toasted sesame seeds
- Wasabi, to serve

1.Combine soy, mirin, sake, sugar, ginger and garlic in a ceramic dish. Add the tuna steaks and set aside for 30 minutes, turning once, to marinate.

2.Cook the noodles following packet directions, drain and refresh under cold water. Transfer to a bowl and toss through the sesame oil to prevent noodles from sticking.

3.Preheat a barbecue or chargrill plate. When it's very hot, add the tuna, reserving the marinade. Sear quickly for 1 minute each side. Set aside to rest.

4.Pour the marinade into a pan over low heat for 2 minutes until heated through.

5.Transfer noodles to a colander and pour over boiling water. Drain and return to bowl, toss in half the warm marinade.

6.To serve, divide noodles between serving plates, top with the tuna, pour remaining marinade over the dish. Garnish with sesame seeds and wasabi.
