Let the sweet flavour of fresh tomato shine in this simple Italian salad.

Ingredients (6)

  • 1/3 cup (80ml) extra virgin olive oil
  • 1 tbs sherry vinegar
  • 1/4 tsp caster sugar
  • 3 large ox-heart tomatoes or vine-ripened tomatoes, thinly sliced
  • 1 eschalot, thinly sliced
  • 6-8 basil leaves, shredded

Method

  • 1.
    Whisk together oil, sherry vinegar and sugar. Season to taste and set aside.
  • 2.
    Arrange tomato, eschalot and basil on a plate, sprinkle over dressing and serve.
