Ingredients (6)
- 1/3 cup (80ml) extra virgin olive oil
- 1 tbs sherry vinegar
- 1/4 tsp caster sugar
- 3 large ox-heart tomatoes or vine-ripened tomatoes, thinly sliced
- 1 eschalot, thinly sliced
- 6-8 basil leaves, shredded

1.Whisk together oil, sherry vinegar and sugar. Season to taste and set aside.
