White chocolate, raspberry, vanilla rice pudding crumble
Who knew it only takes five simple ingredients to create something as delicious as this crumble and rice pudding hybrid.
Ingredients (5)
- 180g white chocolate
- 1.2kg store-bought plain or vanilla rice pudding
- 1 tsp vanilla bean paste
- 1/3 cup (80ml) pure (thin) cream (optional)
- Raspberries, to serve

1.Preheat oven to 200°C. Grease a baking tray and line with baking paper.

2.Place white chocolate on prepared tray and roast, stirring halfway, for 6 minutes or until golden. Set aside to cool, then crumble into pieces.

3.Meanwhile, place the rice pudding and vanilla in a saucepan over medium heat and cook, stirring regularly, until hot. Add the cream if you prefer a thinner consistency.

4.Transfer vanilla rice pudding to a serving bowl and scatter with white chocolate crumble and raspberries to serve.
