Who knew it only takes five simple ingredients to create something as delicious as this crumble and rice pudding hybrid.

Ingredients (5)

  • 180g white chocolate
  • 1.2kg store-bought plain or vanilla rice pudding
  • 1 tsp vanilla bean paste
  • 1/3 cup (80ml) pure (thin) cream (optional)
  • Raspberries, to serve

Method

  • 1.
    Preheat oven to 200°C. Grease a baking tray and line with baking paper.
  • 2.
    Place white chocolate on prepared tray and roast, stirring halfway, for 6 minutes or until golden. Set aside to cool, then crumble into pieces.
  • 3.
    Meanwhile, place the rice pudding and vanilla in a saucepan over medium heat and cook, stirring regularly, until hot. Add the cream if you prefer a thinner consistency.
  • 4.
    Transfer vanilla rice pudding to a serving bowl and scatter with white chocolate crumble and raspberries to serve.
